Do you have low fat recipes for vegetables?
Today I made a spinach and yogurt salad which is quite good. The recipe is in an old middle eastern cookbook by Claudia Roden. I dropped young spring spinach leaves into boiling water, cooked them for 2 minutes, drained them very well and let them cool. The dressing is a mixture of plain lowfat yogurt (Fage yogurt is best) , fresh mashed garlic, salt and pepper. The dressing needs to sit for a few minutes to develop it's full flavor. When mixed with the cooled spinach it is delicious! Please share your favorite low fat vegetable recipes.
